This was a blessing (because what kid doesn't want access to ice cream 24/7?) as well as a curse (what do you think happens to kids who have access to ice cream 24/7? It kind of reminds me of rocky road…and it probably would have even been closer to rocky road with the walnuts added. The fudge was very tasty! It has a very rich chocolate taste to it, but the marshmallows tone it down a bit. I think you can add them in when you toss in the chocolate chips, though. So while I had them ready to go, they never actually ended up in the final product. I should mention that they list “chopped walnuts or pecans” in the ingredients list, but it never turns up in the actual instructions of the recipe. I was a little bit worried about the marshmallows on top, since they didn’t seem to stick to the fudge, but while the fudge hardened they must have adhered themselves to it because they didn’t roll off or anything once I took it out of the fridge.ĭespite the over-mixing and early hardening, the fudge was delicious! It was a bit crumbly, but it might have been less so if I hadn’t overmixed the marshmallow mixture with the chocolate chips. Then I pressed some chocolate chips and marshmallows into the top and put it in the fridge for a couple of hours to harden. Since the fudge was a bit too cool by the time I scraped it into the pan, it was a struggle to flatten it out. This fudge cools VERY quickly, so by the time I “poured” it into the pan it was pretty stiff already. I also stopped a couple of times to take pictures for this blog, which was apparently a mistake. I over-mixed here, unfortunately, so mine turned out mostly chocolate-looking with very few small white spots. This is where things started to fall apart a bit for me. Next the vanilla and chocolate chips were added and mixed to create that “swirl” look. Then I let it cool for 2 minutes before stirring in marshmallows until they’re completely melted. ![]() To start, evaporated milk, sugar, and salt are combined in a pot and boiled over the stove for about 5 minutes. I don’t make fudge a lot, so I was a little bit nervous going in, though the instructions seemed pretty simple. Don’t get me wrong, I know she’s totally insane, but she really does have a lot of love to give and is a deeply caring person despite her craziness.
